Serves 4
Ingredients & Prep: Estimated Time 10 Minutes
1 lb of okra ( wash, dry completely, and cut in half)
1/4 of medium size onion diced into small cubes
4 Garlic Cloves peeled and sliced thin
1-2 teaspoons salt depending on preference
2 Tablespoon Chili Flakes ( you can add more or less depending on your preference)
5 Curry Leaves (optional)
Frying Okra: Estimated Time 20 Minutes
Heat a medium skillet or cast iron pan on medium heat for 5 minutes.
Add 1/4 cup of grapeseed oil, coconut oil, or olive oil.
Add cut okra into the oil. When adding okra make sure it is completely dry and flame is turned off to avoid oil splatter.
Fry the okra with seeds faced down for 5-7 minutes till they become crispy and golden brown
Flip all the okra to have the outer skin face down and fry for 3-5 minutes till it becomes golden brown.
Remove the okra from the oil and placed on a plate lined with a paper towel to soak excess oil.
Spice Prep: Estimated Time 10 Minutes
Using the same pan, add the chopped onion and saute until golden brown for 5 minutes on medium heat.
Add sliced garlic and saute for a minute or 2.
Add the okra back in, along with the chilli flakes and salt.
Saute all the ingredients together for a few minutes.
Turn off heat and plate and serve!
