When you need a little something sweet and spicy, this fried delicious onion mix will be your go to.
Serves 4
Ingredients & Prep: Estimated Time 10 Minutes
1 medium or large red onion ( chopped into small cubes)
Handful of Curry Leaves ( usually I make this optional but these make the flavor that much better, so if you are attempting this, you will need to do a deep dive for curry leaves)
1 Cinnamon Stick Broken into Small Pieces or 1/8 teaspoon ground cinnamon
4 Cardamom Pods ( Remove outer shell and ground the pounds to a powder) or 1/8 teaspoon cardamom powder
Tamarind Paste 1 Tablespoon
Salt 1/2-1 teaspoon depending on taste preference
1/4 cup of coconut oil, olive oil, or grapeseed oil
Part One: Estimated Time 20 Minutes
Heat cast iron pan or skillet on medium heat for 5 minutes.
Add 1/4 Cup Oil to pan and heat oil for additional 2-3 minutes on medium heat.
Add diced 1/4 of medium onion to pan and saute onions on medium heat till golden brown 5-7 minutes.
Add curry leaves and spices ( cardamom, cinnamon, and tamarind paste) saute for 2-3 minutes on medium heat till mixture becomes fragrant.
Add Maldive Fish flakes ( 3 Tablespoons) and salt and saute for 1 minute on medium heat.
Ready to Serve!
Part Two: What can I eat this with?
Traditionally Seeni Sambol is deep fried onions, but my mom's version is a quick and easy recipe. This dish is pretty versatile. It is eaten with Sri Lankan Rice and Curry, traditional rice and bread dishes, or with some fluffy white bread.
If this is your first go at this. My simple recommendation is fry up an egg over easy and toast some bread. Take some seeni sambol and place on your bread and eat and enjoy every morsel. Or for another layer of flavor, add a little egg to the mix.
