Ingredients & Prep: Estimated Time 10 Minutes
2 Cups rice washed thoroughly and dried completely ( traditionally made with Sri Lankan Samba( White Short Grain Rice) but Basmati or any white long grain rice will do.
1 Teaspoon Turmeric Powder
1/4 cup Medium Onion
1/4 cup coconut oil or grapeseed oil
4-6 Crushed Cardamom Seeds or 1/4 teaspoon cardamom powder
1 Small Cinnamon Stick or 1/8 teaspoon cinnamon powder
5-8 Curry Leaves *optional
5 Garlic Cloves Peeled and Sliced
1 Teaspoon Salt
Coconut or Cow Milk & Water ( Follow the instructions for the rice and instead of using all water divide quantity in half with 1 part milk, 1 part water. For example if for 2 cups rice it calls for 4 cups water use 2 cups water & 2 cups milk
Saute Rice: Estimated Time 20 Minutes
Heat cast iron pan or skillet on medium heat for 5 minutes.
Add 1/4 Cup Oil to pan and heat oil for additional 2-3 minutes on medium heat.
Add turmeric powder, onion, cardamom pods or powder, cinnamon stick or powder, curry leaves, garlic, and salt to pan and saute on medium heat till golden brown 3-5 minutes.
Add rice to pan and roast till opaque 5 minutes ( make sure rice is completely dry after washing before adding to pan)
Rice Cooker Prep: Estimated Time 20 Minutes
Remove roasted ingredients from the flame and add to the rice cooker.
Add milk and water to the rice cooker and stir all ingredients to well incorporate everything together.
Set rice cooker to cook and your yellow rice will ready to eat in 20 minutes. Enjoy!
